Watermelon Tomato Salad
perfect, fresh, summer salad
- 1/2 small watermelon diced
- 2 tomatoes or pint of cherry or grape tomatoes diced
- 1 English cucumber or 2 to 3 sm Kirby cucs
- 1/2 red onion chopped fine
- 1 lemon juice & zest
- 1 tsp avocado oil
- 8 fresh basil leaves chopped fine
- dash sea salt & black pepper
Chop all your fruit, veggies, and herbs and place in big bowl. Add lemon zest, juice, and drizzle of avocado or olive oil. Toss well and place in fridge for at least 30 mins so the flavors get working together! This is delish served with grilled chicken or fish.
