Quinoa Salad

chocked full of fresh herbs and flavor

Ingredients

  • 1 cup quinoa rinsed in a strainer, really well
  • 2 cups water cook according to pkg directions
  • 1/2 red onion chopped fine
  • 1/2 English cucumber diced
  • 1/2 pint cherry or grape tomatoes quartered
  • 1/4 cup kalmata olives chopped
  • 1/3 cup feta cheese crumbled
  • handful of fresh parsley & mint chopped fine
  • 1/4 cup balsamic vinegar
  • 1/3 cup olive or avocado oil
  • 1 lemon juice and zest
  • 1 tbsp honey omit if eliminating sugar
  • 1 tsp Greek seasoning or your fav spice blend

Instructions

  • Cook quinoa according to package directions and cool. Salt and pepper veggies and place in a large bowl. Add quinoa, feta, and fresh herbs. Maked dressing, balsamic vinegar on. Add about 1/2 of dressing to salad, stiring to incorporate dressing well. Reserve remaining to serve with salad.
