Quarantine Turkey

- 1 3-4 lb turkey breast* sub whole chicken or chicken breast
- 2 lemons juice & zest
- 2 tbsp olive or avocado oil
- 1 tbsp cumin
- 2 tsp salt
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp harissa heaping dallop
Make a paste with lemon juice & zest, oils, spices, and harissa. Rub it all over the turkey/chicken and you can allow to marinate up to 4 hrs. (I did not pre marinate as I was in a major rush to get it cooking, so unlike me!) Preheat your air fryer and basket to 375 for 5 mins and either cook skin side down, for the first 30 mins or on it's side and then rotate for 30-45 more mins. Depending on the air fryer and the size of your turkey it may take more/less time. Use a meat themometer and insure that it's to temp (160). I put a fresh salad with it and it was an incredible meal. So good that I believe I will make this for Thanksgiving!! The turkey stays so moist and the leftovers are incredible!
