Tomato Watermelon Salad
Summer Salads are my favorite. I hit up the Farmer’s Market on Saturday and saw they had some beautiful small watermelons and vine ripe tomatoes. Ta Da!! I was inspired to use them fresh to make a yummy summer salad. The stars of the show; watermelon, tomatoes, cucumbers, red onion, and fresh basil. It’s bright and fresh and perfect for your next cookout! Serve with or over grilled chicken or fish for a light and healthy meal.
Watermelon Tomato Salad

Ingredients
- 1/2 small watermelon diced
- 2 tomatoes or pint of cherry or grape tomatoes diced
- 1 English cucumber or 2 to 3 sm Kirby cucs
- 1/2 red onion chopped fine
- 1 lemon juice & zest
- 1 tsp avocado oil
- 8 fresh basil leaves chopped fine
- dash sea salt & black pepper
Instructions
- Chop all your fruit, veggies, and herbs and place in big bowl. Add lemon zest, juice, and drizzle of avocado or olive oil. Toss well and place in fridge for at least 30 mins so the flavors get working together! This is delish served with grilled chicken or fish.
