Y’all there is something so comforting and homey and lovely about Chicken Soup! And this one is a keeper!! I have created a dairy free version that even the foodiest of foodies might argue that it was full of cream and butter! It’s quite amazing really and this recipe is what I like to call a chop & drop. Basically chop all your veggies, grab your chicken, broth, and spices and dump them all into your instant pot or slow cooker! It’s really that simple and I even started with frozen, boneless, skinless chicken!! Dumped everything in the instant pot and less than an hour later, MAGIC! It tastes like your Mimi made it and that it had simmered on low all day long! Total WIN!

Equipment

  • instant pot or
  • slow cooker

Ingredients

  • 1 lb boneless/skinless chicken breast or thighs
  • 1 small onion chopped
  • 2 celery stalks chopped
  • 3 carrots chopped
  • 1 cup mushrooms sliced
  • 1 cup butternut squash or sweet potato diced small
  • 2 garlic cloves minced fine
  • 1 cup Wild Rice make sure to use real wild rice, not a boxed blend
  • 4 cups chicken bone broth, stock, or chicken broth I used 2 c ea bone broth & chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp spice blend I love Trader Joe's 21 Seasoning Salute
  • 1 tsp thyme
  • 1 tsp marjoram
  • 1 can coconut milk reserved, stir in at the end

Instructions

  • This is another favorite "Chop & Dump" recipe! I actually used chicken straight from the freezer! Then dumped rice and broth, followed by the spices, garlic, and all the veggies. Now you can do this all in your instant pot/pressure cooker. Seal, set manual to 25 mins. Allow natural release, open and stir in coconut milk. OR put the same, though my understanding is not to use frozen meat in a slow cooker for food safety reasons, even though I always did, oops! Feel free to tell me your thoughts on this! Set your cooker to low for 6-8 hours. This is so yummy!!
