Greek Quinoa Salad
I can’t say the quinoa craze has really hit me, the few times I tried it I thought it tasted like dirt! But, then a friend made a salad that was good. So, I am giving it another try. And this is yummy!! Full of flavor, which I think is the key!! Mint, parsley, lemon juice & zest, balsamic, feta I think you are getting the idea! FLAVOR and lots of it!! Key to it not tasting like dirt, RINSE the quinoa and rinse it well!!

Quinoa Salad
chocked full of fresh herbs and flavor
Ingredients
- 1 cup quinoa rinsed in a strainer, really well
- 2 cups water cook according to pkg directions
- 1/2 red onion chopped fine
- 1/2 English cucumber diced
- 1/2 pint cherry or grape tomatoes quartered
- 1/4 cup kalmata olives chopped
- 1/3 cup feta cheese crumbled
- handful of fresh parsley & mint chopped fine
- 1/4 cup balsamic vinegar
- 1/3 cup olive or avocado oil
- 1 lemon juice and zest
- 1 tbsp honey omit if eliminating sugar
- 1 tsp Greek seasoning or your fav spice blend
Instructions
- Cook quinoa according to package directions and cool. Salt and pepper veggies and place in a large bowl. Add quinoa, feta, and fresh herbs. Maked dressing, balsamic vinegar on. Add about 1/2 of dressing to salad, stiring to incorporate dressing well. Reserve remaining to serve with salad.
