Mediterranean Turkey/Chicken
What’s cooking? Crockpot or Instant Pot Mediterranean Chicken
This is a dish that I came across year ago in a magazine and after a few tweaks, it has become a good to easy weeknight meal and a family favorite. It is so easy, you can cut and dump all the ingredients into your slow cooker in about 10 mins! Now, don’t be scared by the odd combo of food it works and it’s yummy!! I don’t even like raisins and I love them in this, just adds a sweet element. The original recipe uses a turkey tenderloin you can use that or boneless/skinless chicken, both work great! I usually use whatever I have on hand. The flavors come together and you could serve this to guest and no one would ever guess how simple it is!! This is also EASY on the waistline, full of whole, real food. My good friend Heather, who is all about WW points put this recipe in her calculator and it was like 8 points for a whole cup! Again, you would never guess it is high on flavor!
One of my favorite crockpot recipes ever! And now I’ve also done it in the Instant Pot and it works great as well!

Slow Cooker Mediterranean Chicken/Turkey
Equipment
- slow cooker or instant pot
Ingredients
- 1.5 lb turkey tenderloin or boneless/skinless chicken cut in 1 in cubes
- 1.5 lb butternut squash peeled & cubed
- 10.5 oz diced tomatoes w/liquid
- 8 oz salsa
- 1 cup chicken broth
- 1/2 cup golden raisins
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 can chick peas* drained & rinsed
Instructions
- Dump everything in to your slow cooker or instant pot EXCEPT for the chick peas. If using slow cooker set to low for 4-6 hrs if using pressure cooker set manual to 10 mins and quick release pressure. Just before serving add drained and rinsed chick peas just to warm them up. I like to serve this over cous cous.
