Mama Bird’s Meatballs

Y’all will not believe how great these meatballs are! And the fact that they are dairy & gluten free is life! I mean let’s be honest. some recipes “need” those ingredients to be good, right? I thought so! But nope, not here! In fact the Hubs said that these are the best meatballs I have ever made! and he had no idea that they were missing anything!!

Tip:

I like to make these in a large batch, like 3 or 4 pounds at a time. Put them in the fridge to get cold, it makes rolling easier. Even easier is to use a mini cupcake or cookie scoop, that will ensure even cooking. Roll or place them on a rimmed & lined cookie sheet and bake them all. Allow to cool completely and freeze in gallon size freezer bags. For a quick weeknight meal open up your favorite sugar free marinara. Read the ingredients! You’d be amazed how much sugar is hiding in jarred sauces! My two favorites; Rao’s & Trader’s Joe’s and grab some frozen meatballs. Toss them in the sauce and warm up.

Mama Bird’s Meatballs

Ingredients

  • 2 eggs
  • 3 lbs ground beef or turkey I like to mix the two
  • 3 tbsp coconut flour
  • 3 tbsp nutritional yeast
  • 2 cloves garic minced
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp salt
  • 3 tsp coconut aminos
  • 1 tsp fish sauce
  • olive or cocnut oil for browning meatballs

Instructions

  • Mix everything other than oil in a large bowl and mix. Careful to not over mix so they don't get tough! Chill in fridge before rolling or scooping onto a lined and rimmed cookie sheet. Saute in small batches for max flavor. You just want to give them nice color and them in the sauce to finish cooking. Or, you can forgo that step and just bake them, easier, faster, & way less messy! Bake at 400 for 20-25mins.
    To freeze: Allow to cool completely and place in freezer bag, They are good for 3-4 months.
