Dilly-ious Stew Beef
Stew beef was on sale and I got a big family pack, as I was trying to figure out what to do with it when I remembered about this old school Dillicious Pot Roast recipe from an old church cookbook. It had a can of condenced soup, flour, and who knows what else! So I decided totally reinvent it to be gluten and dairy free. You can cook it in the crockpot or instant pot. And I am guessing you have all the ingredients on hand; chicken or beef broth, dill pickle juice, tomato paste, and some spices! A truly fix it and forget it recipe.
Dilly-ious Stew Beef or Roast

Equipment
- pressure cooker or slow cooker
Ingredients
- 3-4 lbs stew beef or chuck roast
- 1 cup beef or chicken broth
- 1/2 cup dill pickle juice
- 2 tbsp tomato paste
- 1 tbsp coconut aminos, tamari, or Braggs aminos
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp dried parsley
- 1 tsp dried dill
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Richard's Seasoning*
Instructions
- Place stew beef/roast in instant pot or slow cooker and all other ingredients, stir, and set instant pot to manual for 70 mins and allow pressure to naturally release or put in your crockpot on low for 10 hrs.
Notes
*Richard’s Seasoning is my favoite gluten and sugar free steak seasoning. I know Montreal Steak Seasoning is also a good one. Use your favorite blend.
