Quarantine Turkey Breast

It’s a strange time in the world and meat counters and grocery stores are bare! My most favorite recipes have been born out of literally using something I have on hand and this is a winner!! Creative cooking is the best! When I compose new recipes I think of adding the elements that will hit all the tastebuds! I always add a little heat/spice, balanced with a touch of sweet, a little briney saltiness, and ALWAYS a bit of acid. Never underestimate the power of a squeeze of lemon juice!

Y’all! Talk about simple and so delicious!! I picked up a jar of harissa at Trader Joe’s not really having a clue what I was going to do with it and just thought hum… I’ll add it to a marinad, the perfect kick of heat without being too much. It was amazing and would be equally delish on chicken!

I started with the juice and zest of two lemons, olive oil, cumin, paprika, oregano, salt, pepper, and the star of the dish, harissa. Slathered it all on and popped it in the air fryer! If you don’t have an air fryer or it’s not large enough, you can just roast it! I highly recommend! So delish!! The turkey is so moist and flavorful! I am excited to repeat this recipe with chicken! Harissa has quite the kick however with a heaping teaspoon it doesn’t give too much heat, just flavor. You can certainly add more if you like a lot of spice!

Ingredients

  • 1 3-4 lb turkey breast* sub whole chicken or chicken breast
  • 2 lemons juice & zest
  • 2 tbsp olive or avocado oil
  • 1 tbsp cumin
  • 2 tsp salt
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp harissa heaping dallop

Instructions

  • Make a paste with lemon juice & zest, oils, spices, and harissa. Rub it all over the turkey/chicken and you can allow to marinate up to 4 hrs. (I did not pre marinate as I was in a major rush to get it cooking, so unlike me!) Preheat your air fryer and basket to 375 for 5 mins and either cook skin side down, for the first 30 mins or on it's side and then rotate for 30-45 more mins. Depending on the air fryer and the size of your turkey it may take more/less time. Use a meat themometer and insure that it's to temp (160). I put a fresh salad with it and it was an incredible meal. So good that I believe I will make this for Thanksgiving!! The turkey stays so moist and the leftovers are incredible!
