Dairy Free Chicken Parm~ Air Fryer

Chicken Parm is one of those comfort food dishes that I thought I would never be able to enjoy again! Y’all!! I was so wrong! This taste so similar that my boys were shocked when I told them it had NO CHEESE!! The best part about the recipe? You don’t need a ton of ingredients.

You can dredge in egg, olive or avocado oil and then use almond flour along with Italian spices for the breading. I like to buy the thin sliced boneless/skinless breast, or you can cut and pound them thin. Then serve over pasta, spaghetti squash, or zoodles. I think spaghetti squash is the best!

Air Fryer

So here’s my TIP use your air fryer for the chicken! Y’all it’s great! Moist and juicy and no need to “fry” in any oil! Just place the chicken in the air fryer and cook for apx 16 mins for larger pieces if you do tenderloins they will cook in about 12 mins.

Spaghetti Squash

Cut your spaghetti squash in half, scoop out the seeds and brush with olive or avocado oil, inside and out. Sprinkle with sea salt and roast in a 400 degree oven for 45 mins. There are tons of short cuts; instant pot in 7 mins! But, I personally don’t think it gives the flavor that roasting does.

Zoodles

Take fresh zuccini and make zoodles. Line a rimmed cookie sheet with paper towels and place zoodles on them, sprinkle with salt and place in a 200 degree oven for about 20 mins. You’ll be amazed at how much moisture comes out! Toss back in oven for a min or two and serve.

Ingredients

  • 1 egg or olive/avocado oil for dredging
  • 1 1/2 lb boneless/skinless chicken breast thinly sliced
  • 1 cup almond flour
  • 2 tbsp nutritional yeast
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Slice or pound your chicken breast so they are thin and will cook quickly. Mix almond flour with all the spices in a bowl or pie dish. Crack egg and lightly whisk in seperate dish. Dredge chicken in egg then flour mix and place in your air fryer. For larger size pieces, like I had cook for apx 16 mins, for tenderloins they will cook in like 12 mins.
    Serve with spaghetti squash, zoodles, or pasta and top with your favorite marinara sauce.
