• Maple Mustard Chicken & Veggie Sheet Pan

    September 21, 2020katgeitner

When I tell you this sheet pan supper is the bomb, I am not exaggerating! It was born from not wanting to leave the house, thus forcing me to use what I had on hand. These tend to become some of my most favorite recipes. I started with 4 chicken breast, bone in and skin on, this will give the most flavor, but feel free to use whatever chicken you prefer. I marinated the chicken overnight and then went hunting for veggies to go with it. I found a bag Brussels sprouts, 4 small sweet potatoes, and a large sweet…

  • Chicken Tortilla Soup

    September 20, 2020katgeitner

Chicken Tortilla Soup just screams FALL! Recipe that was adapted from the Pioneer Woman is a crowd pleaser! I took few shortcuts by using a rotisserie chicken or leftover chicken that I shred. Here’s the skinny on how you too can get a warm bowl of goodness on the table in like 30 mins! Grab your favorite soup pot, I am a huge fan of the Dutch oven! A few key ingredients to make it work: Red Curry Paste: you can find this in the Asian section at all groceries Kaffir Lime Leaves: these were not as easy to locate, but I am in a small town and found them at the Asian Supermarket in…

It’s a strange time in the world and meat counters and grocery stores are bare! My most favorite recipes have been born out of literally using something I have on hand and this is a winner!! Creative cooking is the best! When I compose new recipes I think of adding the elements that will hit all the tastebuds! I always add a little heat/spice, balanced with a touch of sweet, a little briney saltiness, and ALWAYS a bit of acid. Never underestimate the power of a squeeze of lemon juice! Y’all! Talk about simple and so delicious!! I picked up…

  • Dairy Free Chicken Parm~ Air Fryer

    January 24, 2020katgeitner

Chicken Parm is one of those comfort food dishes that I thought I would never be able to enjoy again! Y’all!! I was so wrong! This taste so similar that my boys were shocked when I told them it had NO CHEESE!! The best part about the recipe? You don’t need a ton of ingredients. You can dredge in egg, olive or avocado oil and then use almond flour along with Italian spices for the breading. I like to buy the thin sliced boneless/skinless breast, or you can cut and pound them thin. Then serve over pasta, spaghetti squash, or…
