    I gotta tell you guys that Asian food is traditonally something that would kill me but I have been working on this recipe for at least a year and today my class made them!! They did an incredible job. Though they will not admit it, even the vegetable haters were surprised at the taste and skeptics, well they ate at least 3 wraps each!! They had NO IDEA that this recipe was so “healthy” and allergy friendly! It’s gluten, soy, and peanut free. ENJOY!

  • Tomato Watermelon Salad

    Summer Salads are my favorite. I hit up the Farmer’s Market on Saturday and saw they had some beautiful small watermelons and vine ripe tomatoes. Ta Da!! I was inspired to use them fresh to make a yummy summer salad. The stars of the show; watermelon, tomatoes, cucumbers, red onion, and fresh basil. It’s bright and fresh and perfect for your next cookout! Serve with or over grilled chicken or fish for a light and healthy meal.

    Chicken Parm is one of those comfort food dishes that I thought I would never be able to enjoy again! Y’all!! I was so wrong! This taste so similar that my boys were shocked when I told them it had NO CHEESE!! The best part about the recipe? You don’t need a ton of ingredients. You can dredge in egg, olive or avocado oil and then use almond flour along with Italian spices for the breading.     Y’all will not believe how great these meatballs are! And the fact that they are dairy & gluten free is life! I mean let’s be honest. some recipes “need” those ingredients to be good, right?
