• Tomato Watermelon Salad

    June 6, 2020katgeitner

Summer Salads are my favorite. I hit up the Farmer’s Market on Saturday and saw they had some beautiful small watermelons and vine ripe tomatoes. Ta Da!! I was inspired to use them fresh to make a yummy summer salad. The stars of the show; watermelon, tomatoes, cucumbers, red onion, and fresh basil. It’s bright and fresh and perfect for your next cookout! Serve with or over grilled chicken or fish for a light and healthy meal.

I come up with these meals typically based on what I have on hand. This was inspired by a recipe I had pinned many moons ago. They used apple cider, which has a ton of sugar. I have always loved marinating chicken with vinegars the high acidity breaks down the chicken and leaves a much more tender and flavorful bite. I hope you enjoy this as much as my family and I…

It’s a strange time in the world and meat counters and grocery stores are bare! My most favorite recipes have been born out of literally using something I have on hand and this is a winner!! Creative cooking is the best! When I compose new recipes I think of adding the elements that will hit all the tastebuds! I always add a little heat/spice, balanced with a touch of sweet, a little briney saltiness, and ALWAYS a bit of acid. Never underestimate the power of a squeeze of lemon juice! Y’all! Talk about simple and so delicious!! I picked up…
