Maple Mustard Chicken & Veggie Sheet Pan

When I tell you this sheet pan supper is the bomb, I am not exaggerating! It was born from not wanting to leave the house, thus forcing me to use what I had on hand. These tend to become some of my most favorite recipes. I started with 4 chicken breast, bone in and skin on, this will give the most flavor, but feel free to use whatever chicken you prefer. I marinated the chicken overnight and then went hunting for veggies to go with it.

I found a bag Brussels sprouts, 4 small sweet potatoes, and a large sweet onion. Diced everything up and tossed with a similar marinade. Perfect Fall Weeknight Meal!

Maple Chicken & Veggie Sheet Pan

Ingredients

  • 11/2 lb chicken breast, thighs, whatever you like 4 pieces
  • 12 oz Brussels sprouts washed, trimmed, halved
  • 4 sm sweet potatoes peeled, cubed
  • 1 lg sweet onion peeled, quartered

Chicken Marinade

  • 2 tbsp pure maple syrup
  • 1 tbsp white wine vinegar
  • 2 tbsp dijon mustard Maille is my fav
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/4 tsp crushed red pepper flakes

Veggie Marinade

  • 1/3 cup pure maple syrup
  • 2 tsp dijon mustard
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp thyme
  • 1/4 tsp crushed red pepper optional

Instructions

  • Such as easy dish! Place chicken in a large ziploc bag, mix chicken marinade and dump on bag. Allow to marinate overnight for best flavor or at least 4 hours. Prep veggies and place in large mixing bowl or plastic bag, if making ahead of time. Prep marinade for veggies and pour over, tossing well to coat all the veggies. Preheat oven to 375.Grab a large rimmed cookie sheet and place foil or parchment, I typically prefer parchment, but do yourself a favor and use foil sprayed with not stick spray if you want an easy clean up!! Remove chicken from bag and place each piece in the corners of your pan. Using a slotted spoon remove veggies and sprinkle around the entire pan. You don't want too much of the marinade on the pan, a little, but not floating in liquid! Put some of the extra liquid over the chicken . Cook on 375 for apx 1 hour or until chicken is cooked through. About half way thru flip chicken and move veggies around, add a little of that marinade to the chicken again. Continue cooking until juices from chicken run clear. Larger breast can take about 1 hour and 15 mins to cook well. Emjoy!
