Italian Wonderful Pot!

Have you heard about the Wonder Pot? Can you say WONDERFUL? This is a modern version of the one pot meal! Perfect for your next Meatless Monday or any meal that you need to throw together in under 30 mins with minimal ingredients and full of flavor with the addition of baby bella mushrooms adds a meatiness to the dish and even the hard core meat eaters will not miss or even notice that there isn’t any meat!!

Here’s a close up look at the ingredients. Grab a box of pasta. Bucatini, Lingunini, or Spaghetti all work well. DO NOT use thin spaghetti or angel hair as it will cook too fast and become mushy! A box of chicken broth, 28 oz of diced tomatoes with Italian spices, onion, baby bellas, fresh spinach, garlic, and crushed red pepper. Switch it up however you like!

Ingredients

  • 1 lb pasta; linguini, bucatini, spaghetti
  • 32 oz chicken broth
  • 28 oz diced tomatoes with Italian spices tomatoes & juice
  • 1 tbsp olive oil
  • 1/4 tsp crushed red pepper
  • 1 tsp sea salt
  • 1 small onion sliced thin
  • 3 cloves garlic minced
  • 4 oz mushrooms sliced
  • 6 oz bag baby spinach (1/2 to 3/4 of bag) chopped & reserved to stir in at the end

toppings:

  • Parmesan or Feta cheese is yummy on top
  • black olives are a fav of the boys

Instructions

  • Grab your Dutch oven or a big soup pot and add pasta, broth, tomatoes & the juice from them, spices, onion, mushrooms, making sure everything is submerged in the broth. You can add more broth or a little water if not. Bring to a boil, cover and turn down to low, simmer for 10 mins, stir once or twice during cooking. Slide it off the heat and allow to rest for 5-10 mins, it will create it's own sauce and thicken and gain flavor as it sits. Stir in spinach just before serving along with cheese if you are using.

Notes

You can make this a heavier meatier meal by adding some cooked Italian Sausage, Meatballs, or roasted shrimp is AMAZING!!
