In March of 2019, I could be on that documentry, “Fat, Sick & Nearly Dead”. My hair was falling out, and stretchy clothes were the only thing getting me out the door. I was exhausted all the time, had all sorts of aches & pains and just felt horrible! I went to the doctor on my 46th birthday that also happened to fall on Ash Wednesday. I gotta tell you guys that Asian food is traditonally something that would kill me but I have been working on this recipe for at least a year and today my class made them!! They did an incredible job. Though they will not admit it, even the vegetable haters were surprised at the taste and skeptics, well they ate at least 3 wraps each!! They had NO IDEA that this recipe was so “healthy” and allergy friendly! It’s gluten, soy, and peanut free. ENJOY!

Summer Salads are my favorite. I hit up the Farmer’s Market on Saturday and saw they had some beautiful small watermelons and vine ripe tomatoes. Ta Da!! I was inspired to use them fresh to make a yummy summer salad. The stars of the show; watermelon, tomatoes, cucumbers, red onion, and fresh basil. It’s bright and fresh and perfect for your next cookout! Serve with or over grilled chicken or fish for a light and healthy meal.

I always add a little heat/spice, balanced with a touch of sweet, a little briney saltiness, and ALWAYS a bit of acid. Never underestimate the power of a squeeze of lemon juice! Y’all! Talk about simple and so delicious!! I picked up…

I love nothing more than preserving summer in jars and this is one of my favorite recipes! These make a beautiful addition to your next charcuterie board or make great hostess gifts! Make pickles way ahead! They are best the longer they sit. My Memamama always said they should sit for at least a month or two. I have been hoarding them! I have 2 quart jars hidden, one hasn’t been opened yet and the…
