Chicken Zoodle Soup

The perfect soup to give you all the feels with none of the junk! Toss out the noodles and hit the zoodles!! Seriously this is divine! I love to use bone broth, you can make your own with my recipe or there are some great options for buying now, Trader Joe’s has a good one and I really like Butcher’s Bone Broth that I have now seen in Food Lion and Publix here locally and Costco has it as well! as the healing properties are amazing. You can take lots of shortcuts with this recipe by using leftover or rotisserie chicken. It also freezes beautifully, I would suggest adding fresh zoodles opposed to freezing them just so they don’t get too mushy! I can’t wait for you to try this!! What’s your favorite soup recipe?

Chicken Zoodle Soup

Ingredients

  • chicken breast, thighs, or whole chicken apx 3 cups, cooked, shredded
  • 3 carrots diced
  • 1 sweet onion diced
  • 2 celery diced
  • 1-2 cloves garlic minced fine
  • 6 cups chicken/bone broth
  • 2 tsp tumeric
  • 2 tsp dill
  • 2 tsp fresh ginger grated
  • 1 lemon juice & zest
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 zucchini zoodles reserve for just before serving

Instructions

  • Drizzle olive or avocado oil in a large Dutch oven or soup pot. Add onion, carrots, celery soften veggies apx 3-5 mins add garlic for about a min then add 6 cups broth I like to mix chicken bone broth and chicken broth or make your own. Add turmeric, dill, fresh ginger, lemon, zest and juice simmer on very low 20 mins*
    *or toss all in the instant pot on soup setting for 5 mins. Then add 2-4 cups of shredded cooked chicken and 1-2 cups zoodles
    * Few teaspoons of fresh parsley and thyme
    Zoodles: 1-2 zucchini made into “zoodles” sprinkle well with salt and allow to sweat out the moisture (at least 20 mins) place in kitchen towel and drain well then toss in a 250 oven for 10 mins and you’ll be amazed at how much more flavor they have. Or if you don’t have the time just toss them in your soup but DO NOT skip the salt and draining step! This is key!

One of my most favorite things to make is a big ole pot of Chicken Soup. Now typically that includes egg noodles, dumpling, or even rice but now that I have discovered that my body really doesn’t do well with gluten or wheat or dairy (gasp!) I am adapting my family favorite comfort food recipes so that I can enjoy them too! Packed with flavor and to be frank no one would be the wiser! A really flavorful broth! How do you get one? Well, you have a few options. And let me be honest I have made it every way I am sharing with you and only the foodiest of foodies can really tell a big difference. If you have the time then go with option A. If you are short on time then you can go with Option B, and be proud that you got a real meal on the table!! Congrats! or mix it up based on what you have!
Chicken:
A: start with split chicken breast, thighs, legs, whatever you fancy salt and pepper well and either roast in 375 oven for 40 mins OR toss in instant pot w 1 cup of water, high pressure 20 mins or 25 if frozen.
B: rotisserie chicken it’s the BEST shortcut ever!!
Broth:
A: take the bones and skin along with fresh herbs and what you would discard from the carrots, onions, celery, and whatever other veggies you would put in your soup and dump in instant pot w 6 cups of water salt, pepper, garlic and cook on high pressure for 80 mins
B: buy bone broth and chicken broth at the grocery make sure to buy a quality broth without msg, gluten, or any added sugar
