Preppy Salmon~ Air Fryer
If I had a signature dish, this would be it! I call it my Preppy Salmon because of the beautiful pink and green color on the plate! I have been making and perfecting this dish for almost 10 years. It is such a simple dish that comes together quickly. you can make it any weeknight or bust it out for a fabulous dinner party. The combo of ingredients hit all the taste buds! It’s really fantastic! Don’t skip the Pea Puree or the crumbled bacon on top! Although just the salmon itself is great!! So you can if you are going for simple and quick!
Start with a beautiful piece of salmon. I do a 1 1/2 lb piece for the family it feeds 3-4 depending on the hunger of my boys! I always ask the fish guy to remove the skin, it’s messy and I don’t do it well! Mix a simple marinade, pour over salmon and allow salmon to sit on the counter for 1 hour so that it will come to room temp prior to air frying.
I am including 2 ways of cooking this dish. My long time favorite method of cooking salmon has be the Cold Oven Method. Place salmon in a non pre heated oven, crank temp to 400, and set timer for 20 mins. Tried and true and great. Until now, holy smokes can we discuss air ftyer salmon? It is AMAZEBALLS. Absolute perfection! I will only use the oven if I am cooking for an army of people since my new air fryer will only hold up to a 2lb piece. If you have an airfryer I highly suggest you try it.
Preppy Salmon
Equipment
- air fryer
Ingredients
- 1 1/2 lb salmon skin removed
- 1 tbsp coconut aminos
- 1 tbsp molasses, maple syrup or honey
- 1 tbsp dijon mustard Maille is my fav!
- 1 tsp avocado oil
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 juice of lemon
- Pea Puree pour over cooked salmon
- 3-4 slices crisp cooked bacon for topping
Instructions
- Whisk all the ingredients for the marinade together and pour over salmon and allow to warm up to room temp on the counter for 30 mins. Place in airfryer 390 degrees for 12 mins Check salmon for doneness and remove or add another min or two depending on thickness and size of salmon. If it's one piece its going to take a little longer than if it was several small pieces. you can always start with 7 mins check and add time. Top with Pea Puree and crumbled bacon
Pea Puree’
What takes this salmon over the top is the Pea Puree. Don’t let this intimidate you! It’s a bag of frozen steamer peas, zapped in the micro and then blitzed in the mini food processor or blender with some seasonings, honey, and coconut milk or half & half. So simple!
Pea Puree’
Ingredients
- 10 oz frozen sweet peas
- 1 tsp honey
- dash salt
- 3 cranks fresh ground pepper
- 1 tbsp coconut milk
Instructions
- toss cooked peas and the remaining ingredients to a blender or food processor (the mini one is perfect for this) and blitz, stir and taste add seasoning and coconut milk until smooth
