Old Standby (when I have lots of time) Perfect Shredded ChickenI buy the huge pack of chicken roast it, rub with olive oil, salt & pepper and roast it at 350 for 1 hour 15 mins or until juices run clear. Then simply put the big hunks in your stand mixer and turn on.In a few minutes you have PERFECT shredded chicken!I put varying amounts in freezer bags and pull out for burritos, soup, chicken salad whatever!2019- New Way (saves so much time and is PERFECT!) Toss your frozen or fresh chicken in your Instant Pot with 1 cup of chicken broth, salt, pepper, and your fav herbs. I love Trader Joe’s 21 Seasoning Salute. Set your pressure cooker to manual for 10 mins if frozen, 7 if fresh and no joke in under 30 mins your chciken goes from frozen to perfectly shreddable and it’s not rubbery or dry at all! It’s like MAGIC and seriously it shreds so easily that you don’t even need to bust out another appliance.
