Lazy Girl’s Indian Chicken

Y’all, I am no expert in Indain cusine, however I do know good food when I taste it and when the craving hit for Chicken Tikka Masala I thought ok, I can wing this and replace the cream with coconut milk and just leave out the yougurt and we will see what happens! It was a win! AND it takes like 10 mins to prep! So, you too can have a really yummy Indian dish in under 30mins! Winning!

My short cuts: You can totally measure out all the spices or you can get this yummy concoction from Savory Spice Shop the ratio in which they have the spices is excellent and they don’t add any weird stuff like sugar! I also use boneless/skinless organic chicken thighs, I find them to be so much more flavorful and they are cheap!

2 lbs boneless/skinless chicken thighs, cubed

1 sweet onion, quartered and rough chopped

15 oz tomato puree make sure there is no added sugar!

3 Tbsp tomato paste

1 heaping tablespoon Tikka Masala Spice blend

1 heaping teaspoon Garam Masala

1 teaspoon salt

juice from 1/2 lemon

2 cloves garlic, minced

1 can coconut milk, reserved for stirring in at the end

put everything in the bowl of your instant pot if you are making this on the fly for dinner or you can use a slow cooker if you prefer to prep earlier in the day. If using instant pot, select manual and 10 mins, remember when using an instant pot it takes a good 10-15 mins to come up to pressure, then the cook time begins. After the cook time is done I let it depressurize naturally (apx 10 mins) if you are in a rush, you can manully release. I make jasmine or basmati rice for the boys to go with it and if I am extra thoughtful some naan bread to dip into the heavenly sauce. Once you have realeased and just before serving open a can of coconut milk and scoop out just the top portion (the cream) or flip the can and pour the watery part off and then scoop out the cream that has seperated from the water and stir in with the chicken and sauce. That’s it! So easy, so quick, and so delish!! Enjoy

*for slowcooker, dump it all in reserving the coconut milk for just before serving and set on low for the day or high for apx 3 hrs
