Not your Mama’s Pea Salad
I know, I know when you hear the words Pea Salad you think that old mayo covered, cheddar cheese, dairy nighmare or goodness, depending on your taste! But THIS Pea Salad is fresh and light and full of flavor that you will want to share with your friends! Dairy, sugar, and gluten free! I think this would be perfect for a summer cookout, Easter lunch, or your next bbq.

Not your Mama’s Pea Salad
fresh sugar snap peas take this to a whole new level
Servings: 4
Ingredients
- 12 oz sugar snap peas cut in half or thirds
- 2 sm cucumbers sliced
- 1/2 sweet onion diced
- 2 tbsp pimentos or roasted red peppers
- 5-7 mint leaves rolled and sliced super thin
- 1-2 tbsp fresh dill chopped
- 4 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Grab a bowl and add red wine vinegar and mustard, mix well add herbs, s & p, mix cut veggies and add to bowl of dressing, toss well to coat and toss in fridge to chill for at least 30 mins
