Shrimp on the Barbie

SHRIMP is yummy but, let’s be honest I typically make some yummy cocktail sauce that is full of sugar to dunk them in!  So, how to add flavor without sugar was my mission. First, a charcoal grill it adds tons of flavor with zero guilt! Next my love of fresh herbs & lemon juice adds so much. This recipe is so crazy simple and comes together in like 5 mins. It will take longer to get your grill ready! 

I got John this great grill pan for Father’s Day. It works so well for veggies and I thought why go to the trouble of soaking skewers for the shrimp? Let’s just toss them in this grill pan and it worked beautifully! 

Grilled Shrimp

Equipment

  • grill

Ingredients

  • 1 lb shrimp peeled & deveined
  • 1 lemon juice & zest
  • 1 tsp avocado oil
  • 1 tsp dijon mustard Maille is my fav!
  • 2 tsp fresh tarragon
  • 2 tsp fresh thyme
  • 2 tsp fresh parsley

Instructions

  • Chop herbs, zest lemon and squeeze juice, add all to small bowl with mustard, oil, and salt & pepper. Toss shrimp in marinade and place in fridge for about 20 min, while you get your grill good and hot. If you don't have a grill pan you can use skewers or throw directly on grill (be careful they may stick or fall through the grill grate. Flip shrimp as soon as they start to turn pink. This will only take a min or two. That's it! Emjoy!
