Best No Bean Chili EVER!!

Are you eating clean? This NO Bean Chili is full of whole, real food, so full of spices and flavor that you’ll never miss the beans! Last week a friend was talking about chili and well, y’all know how impreshinableI am! The chili idea stuck. I haven’t had any kind of beans since April and I really am not sure how they will affect me so I set out to make a delish chili that felt like chili but didn’t have beans. So I started with my Pumpkin Chili recipe as a starting point. This is a great chili and you should try it!

I started looking in the pantry and fridge for something I could add in place of the beans but something that would have enough texture to hold up and not go mushy! Lawd have mercy… Plantains! Can I just call myself a genius? This chili is incredible, the boys even suggested that I enter it in a chili contest! So simple and easy. I made this in the crockpot. You can use the instant pot or traditional stove top. You decide.

Plantain & Pumpkin Chili

Equipment

  • crockpot or instant pot or stove top you decide!

Ingredients

  • 1 lb ground turkey, my pref ground beef, chicken, or plant/soy based "meat"
  • 1 lg onion diced
  • 1 green pepper diced
  • 2 cloves garlic minced
  • 4 oz diced fire roasted green chilis sometimes I use two!
  • 15 oz pumpkin puree
  • 28 oz diced tomatoes
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp unsweetened cocoa powder
  • 1 tsp salt
  • 2 cups beef bone broth*
  • 2 ripe plantains, cubed reserved for later

Instructions

  • Brown ground turkey, drain any grease off meat, sautee onions & peppers, add green chilies, spices and all other ingredients except plantains. Either simmer on low on stove top or dump everything into your slow cooker and set to low for apx 6hrs. Add cubed plantains apx 30mins to 1 hr before serving.

    To use instant pot; add meat, onions, peppers and sautee until meat is cooked thru. Drain and return to instant pot, add remaining ingredients and give a good stir. Hit chili/soup button 10-12mins and quick release. Add plantains and enjoy.

Notes

  • Bone broth adds a depth of flavor with no added sugar or msg or other rendom ingredients, you can substitute beef or chicken broth or stock, if using a broth I suggest cutting the salt in the recipe as some broths are really high in sodium
